Persian Gum (PG) is a natural polysaccharide exudate obtained from wild almond trees that are mainly native to Iran. It is also known as Mountain almond, Prunus scoparia Spach (Amygdalus scoparia Spach), Zedo, Shirazi, Farsi, and Angum gum.
This gum is a transparent, semi cloudy odorless exudate which can be found in different shapes such as large granules, sugar crystals and powder with diverse colours varying from white to brownish red. PG is an anionic and acidic hydrocolloid having water soluble and insoluble parts.
PG, as a natural herbal remedy, has been used in traditional medicine since ancient times. For instance, it may be employed as a poultice for swollen joints, an anti-parasite, a toothache relief, an appetizer, an anti-cough agent, a hair conditioner and a skin glaze.
The dry matter of PG consists of ~94-95% polysaccharides and ca. 5-6% impurities including fat, protein, phenolic compounds (tannins) and minerals, which can be removed by alcoholic precipitation.
Most of physicochemical properties of PG particularly its total sugar and uronic acid content is noticeably different from gum Arabic. In terms of the apparent viscosity, PG solutions had a much higher viscosity than Gum Arabic.
On average, one gram of PG can absorb about 12 g of water. PG does not form a gel at a concentration range 1–8%. It can, however, produce a true gel network at concentrations higher than 11–12%. The dispersiblity of PG in water considerably increases by rising temperature.
PG can be used as an emulsifying and/or stabilizing agent in the food and pharmaceutical products, both alone and combined with Gum Arabic.
